Chocolate Chip Coconut Cookies


  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup margarine or butter
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 ½ cups ORIGINAL MALT-O-MEAL®, dry
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 2 cups flaked coconut
  • 2 cups semi-sweet chocolate chips


Heat oven to 350°F. In a large mixing bowl, combine sugar, brown sugar, butter and eggs. Beat at medium speed, scraping bowl often, until light and fluffy (1-2 mins.). Add remaining ingredients except coconut and chocolate chips. Beat at low speed, scraping bowl often, until well mixed (1-2 mins.). By hand, stir in coconut and chocolate chips. Drop dough by rounded teaspoonfuls or roll into 1 inch balls; place 2 inches apart on greased cookie sheets. Bake at 350°F. for 8-10 minutes or until lightly browned. Yield: 8 dozen cookies.
