Bran Flakes muffin recipe

Ingredients 

  • 1 ½ cups flour
  • cup firmly packed brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 egg
  • 1 ½ cups fat-free milk
  • 2 tablespoons oil
  • 3 cups Post® Bran Flakes cereal
  • cup raisins

Instructions

  1. Mix flour, sugar, baking soda, cinnamon and salt in large bowl. Beat egg in small bowl; stir in milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins. Spoon batter into muffin pan which has been sprayed with cooking spray, filling each cup 2/3 full.
  2. Bake at 400°F for 20 to 25 minutes or until lightly browned. Serve warm.
