Grape-Nuts Tabbouleh Salad
- 2 cups cherry tomatoes, quartered
- 1/2 cup finely chopped yellow or white onions
- 1/2 cup finely chopped green onions
- 1/2 cup finely chopped fresh parsley
- 1/4 cup fat-free Italian salad dressing
- 2 Tbsp. lemon juice
- 4-1/2 tsp. finely chopped fresh mint
- 1 cup Grape-Nuts Cereal
- Combine all ingredients except cereal in large bowl; cover.
- Refrigerate at least 1 hour to allow flavors to blend.
- Stir in cereal 30 min. before serving. Let stand at room temperature until ready to serve.
