Banana and Spice Cake

MADE WITH: Malt-O-Meal Hot Cereal

Ingredients

  • 1 cup sugar
  • ½ cup packed brown sugar
  • ½ cup butter or margarine
  • 2 eggs
  • 1 cup mashed banana
  • 2 cups all-purpose flour
  • ½ cup ORIGINAL MALT-O-MEAL®, dry
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup chopped walnuts

Butter Cream Frosting:

  • 3 tablespoons butter
  • 2 cups powdered sugar
  • ½ teaspoon vanilla
  • 2-4 tablespoons milk
  • dash of salt

Directions

Heat oven to 350°F. Grease and flour 13X9-inch baking pan. Cream butter and sugars until light and fluffy. Add eggs and bananas; mix well. Combine dry ingredients; stir into creamed mixture, mixing just until moistened. Stir in nuts. Pour into prepared pan. Bake at 350°F. for 40-45 minutes or until wooden pick inserted in center comes out clean. Cool completely before frosting. For frosting, combine all ingredients and beat well. Frost cake. Yield: 12
