Bring a little sunshine to your day with these Tropical Granola Cups. From its sweet, nutty base to its creamy coconut (or lemon) filling and whatever fruit suits your fancy, these sweet granola cups are truly delightful.

Honey Bunches of Oats tropical granola cups recipe

Ingredients 

  • 2 ¼ cups Honey Bunches of Oats® with Almonds cereal coarsely crushed
  • 2 tablespoons flax meal
  • ¼ cup banana chips finely crushed
  • ¼ cup unsweetened flaked coconut
  • ¼ cup whole grain oatmeal
  • ¼ cup butter
  • ¼ cup brown sugar
  • 2 tablespoons honey or agave nectar
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon coconut extract
  • ¼ teaspoon cinnamon
  • 2 150-gram containers lemon or coconut-flavored yogurt
  • Cut up fruit such as mango, kiwi, banana, pineapples, or other fruit of your choice.

Instructions

  1. Preheat oven to 325°F. Grease a 12 cup muffin tin with cooking spray and set aside.
  2. In a medium bowl combine Honey Bunches of Oats® cereal through oatmeal. Set aside
  3. In a small pot set over medium heat, combine butter, brown sugar, honey and cinnamon.
  4. Cook and stir over medium heat until sugar is dissolved.
  5. Remove from heat and add vanilla and coconut extract.
  6. Pour over Honey Bunches of Oats Mixture and thoroughly combine. Allow to cool slightly.
  7. Into each muffin well, place ¼ cup. Press granola mixture into the bottom and up the sides of the muffin tin.
  8. Bake for 14 minutes or until slightly browned.
  9. Allow to cool in the pan and then loosen and remove.
  10. Fill each cup with 2 tablespoons of yogurt of choice and chopped fruit.
  11. *You can store the granola cups, without yogurt in an air tight container for up to 1 week. Speaking from experience, if you fill the cups with yogurt and then store them in the fridge, they will become soggy. Therefore, I recommend only preparing as many cups as you'll be serving at one time.
