Yogurt Pancakes and Granola Topping

These yogurt pancakes bake up fluffy and tender thanks to milk and low-fat yogurt in the batter, with granola folded in for extra texture. Serve with berries, more yogurt, granola, and a drizzle of maple syrup or honey for a breakfast-worthy finish.

Ingredients 

Pancakes

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 3/4 cup milk
  • 1/2 cup low-fat plain yogurt
  • 1 egg lightly beaten
  • 3 tablespoons vegetable oil divided
  • 1/2 cup Premier Protein® Honey Almond granola

Instructions

  1. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk milk, yogurt, egg, and 1 tablespoon of the vegetable oil.
  3. Stir liquid mixture into flour mixture until just combined; fold in granola.
  4. Lightly brush a large nonstick skillet with some of the remaining oil; heat over medium heat.
  5. Using scant 1/4 cup batter per pancake, pour four pancakes into skillet.
  6. Cook about 2 minutes or until bubbles appear on top and bottom is golden brown.
  7. Flip and cook about 1 minute or until bottom is golden brown.
  8. Repeat with remaining batter and oil.
  9. To serve, garnish pancakes with berries, yogurt, granola, and maple syrup.
