These delicious peanut butter muffins use Peter Pan™ Creamy Peanut Butter to create a rich, satisfying bite that’s great for breakfast or an easy snack.

Ingredients 

  • cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter melted
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • cup whole milk
  • ¾ cup Peter Pan Creamy Peanut Butter
  • ½ cup peanut butter chips

Instructions

  1. Preheat oven to 400°F. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the melted butter and brown sugar.
  3. Whisk in the eggs and vanilla extract.
  4. Stir in the milk until smooth.
  5. Whisk in the Peter Pan Peanut Butter until creamy and well-combined.
  6. Fold in the dry ingredients, mixing until just combined. Add the peanut butter chips and fold in, being careful not to over mix.
  7. Line a 12-count muffin tin with muffin liners. Fill each muffin cup most of the way.
  8. Bake at 400°F for 14-17 more minutes until the centers are completely set.
  9. Allow the muffins to cool, then serve!
