Morning Cereal Muffins


Whether you're starting your day or ending it, these morning cereal muffins featuring Honeycomb® cereal hit the spot. They're soft, tender and just the right amount of sweet.

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 tablespoons baking powder
  • teaspoon salt
  • cup cold butter or margarine
  • 3 ⅓ cups Post Honeycomb® cereal
  • 1 cup milk
  • 1 egg
  • 1 teaspoon sugar
  • teaspoon ground cinnamon


  1. Preheat oven to 400°F.
  2. Mix flour, 2 Tbsp. sugar, the baking powder and salt in large bowl; cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  3. Mix 3 cups of the cereal and the milk in medium bowl; let stand 3 min. Stir in egg. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
  4. Spoon evenly into 12 greased medium muffin cups, filling each cup 2/3 full. Mix remaining 1/3 cup cereal, 1 tsp. sugar and the cinnamon.
  5. Sprinkle evenly over muffins.
  6. BAKE 20 to 25 min. or until golden brown. Cool.
  7. Makes 12 servings, 1 muffin each.
