Great Grains Banana Nut Crunch Banana Bread

Ingredients 

  • cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • ¾ cup firmly packed brown sugar
  • ¾ cup buttermilk
  • ½ cup oil
  • 1 fully ripe medium banana, mashed (about 1/2 cup)
  • cups Great Grains™ Banana Nut Crunch™ cereal
  • 1 teaspoon oil

Instructions

  1. Preheat oven to 350°F.
  2. Mix flour, baking soda and salt in large bowl; set aside. Beat eggs in medium bowl; stir in sugar, buttermilk, ½ cup oil and the banana. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in 2 cups of the cereal. Spoon batter into greased 9×5-inch loaf pan. Crush remaining ½ cup cereal in small bowl. Add 1 teaspoon. oil; mix well. Sprinkle evenly over batter.
  3. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Cut into 16 slices to serve.
