Cranberry Almond Crunch Muffins

Muffins are the perfect on-the-go breakfast or snack! These cranberry almond muffins are made with Great Grains® Cranberry Almond Crunch® cereal and warm spices. Try the recipe!

Ingredients 

  • ¾ cup brown sugar
  • 1 ⅓ cups whole wheat flour
  • 1 cups white flour
  • 2 cups Great Grains® Cranberry Almond Crunch® cereal
  • 1 teaspoon vanilla
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 2 cups low-fat milk
  • 2 eggs beaten
  • ¼ cup oil or applesauce for a healthier option

Instructions

  1. Pre-heat oven to 425F or 220C.
  2. Grease muffin tin or place wrappers in tin. In a mixing bowl stir whole wheat and white flour, sugar, baking powder, cinnamon and Great Grains® Cranberry Almond Crunch® cereal.
  3. Add the milk, beaten eggs and the oil {or applesauce} Mix until blended.
  4. Place in muffin tin ⅔ full. Sprinkle some crushed cereal on top of each muffin.
  5. Bake for 15-20 minutes or until baked through and golden brown on top.
