Low Fat Magic Muffins

MADE WITH: Malt-O-Meal Hot Cereal

Ingredients

  • 1 ¼ cup all-purpose flour
  • ¾ cup ORIGINAL MALT-O-MEAL®, dry
  • ½ cup sugar
  • ¾ cup skim milk
  • 3 tablespoons vegetable oil
  • 2 egg whites or ¼ cup fat-free egg substitute
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla

Directions

Directions: Heat oven to 400°F. Grease muffin cups or line with baking papers. In a large mixing bowl, combine all ingredients; stir just until all ingredients are moistened. Fill muffin cups ¾ full. Bake at 400°F. for 18-20 minutes or until center is firm to the touch. Yield: 12 muffins.
