​​Grape-Nuts® Cereal Muffins



1 Cup Grape Nuts

¼ Cup Brown Sugar

1 Teaspoon Cinnamon

4 Tablespoons Melted Butter



2 Cups Flour

1 ½ Teaspoons Baking Powder

1 Tablespoon Almond Flour

3 Teaspoons Cinnamon

2 ½ Cups Diced Apples

1 Cup Brown Sugar

2 eggs

3 teaspoons vanilla extract

½ cup half and half


  1. Preheat oven to 375°
  2. Line a muffin tin with 12 liners
  3. Coat chopped apples with almond flour and 1 teaspoon cinnamon
  4. In a medium mixing bowl, mix together baking powder, 2 teaspoons cinnamon and 2 cups flour
  5. In a separate mixing bowl, beat brown sugar and butter together thoroughly
  6. Add vanilla extract and 2 eggs to the sugar/butter mixture and beat until combined
  7. Add half and half and beat until combined
  8. Slowly add in flour mixture until fully incorporated
  9. Fold in chopped apples
  10. Divide evenly into 12 muffin liners in muffin tin
  11. Combine all topping ingredients in a mixing bowl
  12. Sprinkle over the unbaked muffins and press lightly into batter
  13. Bake for 30-35 minutes
  14. Allow muffins to cool for about 15 minutes
  15. Enjoy!
